Peeps, it has been one long week. We are gearing up for a big quarterly meeting at work, and it has made for some long and stressful days. I have had little energy to cook a decent meal much less photograph and blog about it. The light at the end of the tunnel all week has been a road trip!
Sean and I took off Friday, and we are currently on the road to Oklahoma to attend the wedding of a good high school friend of Sean’s. Sean’s mom, Deb, is also joining us!
Deb drove up from Columbia last night, so we could leave early Friday morning. We all celebrated the start of our mini vacation with a wonderful meal.
Baked potato with butter and cheese, fresh corn on the cob and grilled steak. It totally hit the spot. Deb also brought a bottle of red wine with her.
Gnarly Head is a favorite red wine of ours. I do not have much knowledge about wine. I cannot tell you what it had hints of, but I know I like this one!
Much needed dinner!!!
We have been working with Enzo about laying down while we eat. Thus we are probably one of few people you will meet that have dog treats on the table along with the salt and pepper.
He was a good puppy last night. Sean brought him up a carpet square and he was a happy camper.
Eventually he cashed out!
I wanted to start the day with a solid breakfast so that I was not munching all day in the car. Oats in a jar to the rescue!
In the Jar:
– 1/2 cup quick oats
– 1/2 cup water
– 1/2 cup unsweetened soy milk
– splash of vanilla
– pinch of salt
– defrosted frozen banana
– toppings: last of the strawberries and little bit of milk chocolate chips
This was delicious and left my perfectly full and satisfied.
After breakfast, it was time to get ready, pack and hit the road. It is warm and muggy here, but it sure is a beautiful day!
